The coffee industry: challenges and solutions for sustainability

Friday 01 December 2023 From 8:45 am - To 9:45 am (CEST)

The modern consumer increasingly demands that coffee products and producers be "sustainable"; businesses, scientific and technological research bodies and institutions have a moral duty to perfect ethical, global and balanced ecosystems that take into account the environmental, social and economic aspects of this supply chain.

Sustainability in the coffee sector presents many sensitive aspects: starting from the procurement of coffee, throughout the production process which leads to the creation of the finished product such as ground coffee, and finally to packaging in vacuum-packed packages, capsules or bean packages. Above all, this system brings into play several parameters that significantly contribute to the final result through strict quality control. Italian roasting companies therefore represent the fulcrum of this value chain, committing themselves every day towards sustainable production, i.e. respectful of management systems, procedures and practices in various areas of sustainability, including: environment, product and consumers, supply chain, and community . Furthermore, these development and cultivation programs create greater opportunities for differentiating sensory attributes of the finished product. However, the quality of the grain harvest requires careful examinations (e.g. eliminating impurities and foreign bodies) to guarantee the best performance during subsequent steps such as drying, which can take place according to different methods. Other opportunities concern the innovation of the blends to be used at the roasting level. In short, within the possible actions to be adopted as part of sustainable strategies, the procurement of raw coffee and the supply chain (e.g. choice of packaging materials and logistics and distribution services) constitute key areas for alignment with international standards of a sustainable coffee supply chain.

Do you know Digital Food Ecosystem?

Digital Food Ecosystem is a partnership led by aizoOn in collaboration with technology partner companies, universities and research centers offering solutions in the Agrifood sector that meet challenges and specific needs of companies in three different areas:

  • Business: the company’s business model is redesigned by making changes in the value chain and processes, allowing its evolution or revision, sometimes even complete;
  • Methodologies: new methods and approaches are identified, valid on one or more parts of the process, designing and activating their implementation;
  • Technologies: technological solutions are developed, applied and implemented, based on the integration of IT and OT components, which have a direct impact on company operations at different levels of pervasiveness and extension.

DFE’s ability to propose arises from the experience and results obtained in the Food Digital Monitoring (FDM) research program.

DFE is an ecosystem that provides the agrifood chain with a specific and distinctive capacity for digital innovation, complete in terms of approach, methods, tools and technologies.
