Rice as a sustainable supply

Quality and nutritional aspects in the era of circular economy and functional nutrition

Rice is a fundamental raw material, which plays an important role in the diet and economic prosperity of the territories.
However, its production is often associated with risks in terms of sustainability, for example due to the abundant use of water for irrigation or the greenhouse gas emissions of its production cycle.
In the Italian scenario of this supply chain there are many projects with the aim of divulging the real extent in terms of sustainability and of establishing advantageous collaborations between several parties interested in innovating and evolving the way in which rice is grown, harvested and distributed. It is possible to make this cereal more sustainable for both people and the planet through cutting-edge technologies and better farming practices.

During the webinar, starting from the concept of analytical traceability of the product, some case studies related to research progress in the fields of quality and food design will be discussed, recalling some fundamental aspects related to the nutritional properties of rice. These are optimization models, for example the virtuous use of water, the reduction of CO2 emissions and the promotion of biodiversity.
