The future of extra virgin olive oil

Characterization of extra virgin olive oil by means of nuclear magnetic resonance (NMR) techniques and multivariate statistical analysis (MVA)

Nuclear magnetic resonance (NMR) spectroscopy coupled with multivariate analysis is applied to investigate the metabolomic profiles of different extra virgin olive oils (EVOO) collected from different geographical areas. In particular, the analyzes concern samples of commercially blended EVOOs from various Italian regions, European and non-European countries. Principal Component Analysis (PCA) and other analyzes applied to NMR data serve to reveal the existence of marked differences between Italian and foreign oils. These results aim to develop a powerful NMR-based tool capable of protecting Italian olive production.
